Whoopie Pies
Ingredients:
Cookies:
1 cup white sugar
1⁄2 cup shortening
2 large eggs, separated
2 cups all-purpose flour
5 tbsp unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
1⁄2 tsp salt
1 cup milk
1 tsp vanilla extract
Filling:
2 cups powdered sugar
3⁄4 cup shortening
1 pinch of salt
1 tsp vanilla extract
Instructions:
1. Preheat the oven to 350°F. Prepare baking sheets with parchment paper.
2. Beat sugar, shortening and egg yolks together in an electric mixer until light and fluffy.
3. Whisk flour, cocoa, baking powder, baking soda and salt in a separate bowl; add in other mixture in batches, alternating with milk, beating briefly after each addition until smooth. Stir in vanilla extract.
4. Drop spoonfuls of dough onto baking sheets.
5. Bake for 10-12 minutes or until centers spring back when lightly touched. Let cool on pans then transfer to wire racks to cool completely.
6. For the filling, beat the powdered sugar, shortening, egg whites and salt together with an electric mixer until light and fluffy. Stir in vanilla.
7. Choose two cookies of similar size; spread a thick layer of filling on the flat side of one cookie and top with the remaining cookie.
Depression Cake
Ingredients:
1 cup granulated sugar
2 cups light brown sugar
2 cups water
1 cup oil
4 cups raisins or mixture of dried fruits
1 tsp ground cinnamon
1 tsp ground nutmeg
½ tsp ground cloves
2 tsp salt
4 cups flour
2 ½ tsp baking powder
2 tsp baking soda
Instructions:
1. Preheat keep oven to 350°F.
2. Prepare a 13 x 9 baking pan with parchment paper.
3. In a large saucepan, add the white sugar, light brown sugar, water, oil, raisins or dried fruit,
cinnamon, nutmeg, cloves and salt. Bring to a boil and boil for three to four minutes.
4. Take pan off the heat and let it cool for five to eight minutes.
5. In a separate bowl, sift together the flour, baking powder and baking soda.
6. Add flour to the boiled mixture in the sauce pan and mix well.
7. Pour mixture into the prepared baking pan
8. Bake for 45 minutes or until a toothpick comes out clean.
9. Cool in baking tin for 10-15 minutes
10. Turn out onto a cooling rack and allow to cool completely.
